Saint Agur cheese was born in 1988 in the Velay Mountains, in the heart of Auvergne, in the cheese factory of the Vallee de l’ Ance. After three years of experiments, the maitres fromagers finally found the right balance between intensity and meltiness and proposed an octagonal shape that differs from the traditional round forms and is inspired by the basalt stalactites of the Auvergne region. Saint Agur cheese, in fact, has no rind, but a moist and irregular surface. Its paste, which is also moist and very fragile, is cream-coloured, dotted with cavities and studded with small blue/dark grey spots. It has a slightly salty flavour with a pronounced bleu taste sweetened by its buttery texture. It is frequently eaten spread on bread as an aperitif or at the end of a meal, often accompanied by a light red wine.
