Codesa’s Cantabrian anchovies are certified caught in spring. After being treated with sea salt, the ANCHOVIES mature for a period of 6 to 10 months before being immersed in delicate olive oil. The fillets are homogenous and meaty. The process maintains Codesa’s high standards.
